Fresh Summer Salsa

There are just some things that taste like summer, and for our family, this salsa is one of them.  I make salsas a few times per week in the summers ~ lots of lime juice, cilantro and fresh ingredients from the garden are all included, and since it’s so versatile and portable, we pack it up and take it everywhere!
I make this salsa in the food processor, but before I had one, I just used the blender.  You could also use the Ninja.

And once again, since I don’t measure things when I’m cooking, these amounts are estimates!

Ingredients:
1 medium cucumber
1 bunch of cilantro
1/2 medium onion
2-3 medium tomatoes
Fresh tomatoes OR 1 cup of low sodium, crushed tomatoes
salt, to taste
Sugar, stevia or honey to taste
juice of 1 freshly squeezed lime

Optional items = hot peppers and/or hot sauces

I start by blending the larger ingredients first ~ so the onion, cilantro and cucumber go first.

Once blended for a few seconds, I add the lime juice, tomatoes, salt.

Blend until desired consistency and that is it! Garnish with lime wedges or extra cilantro and enjoy! We love this with chips, veggies, and of course, on Taco Tuesday!
